Almond Caulifower Crumble with Sweet Potato Mash

As we move into Autumn, warmer foods and cooked for a longer periods of time starts to attune our bodies for this coming contraction period. Baked dishes are great for that as they helps conserve our own internal heat. Cauliflower is beneficial for the lungs and if we actually look closer it reminds us our life force house and source of positivity in Life – our Lungs! Stay warm:-)

Ingredients: 1 cauliflower, nutmeg, 200ml soya / oat cream, 50 grams peeled almonds. 20 grams fresh coriander, 1 tsp rock salt, 2 medium size sweet potatoes, Parmesan cheese – optional, 1 tbs roasted black sesame seeds, 1 tbs of olive oil and 1 tsp. of tahini.

Preparation: Slice the cauliflower into small pieces and spread them across an oven proof dish. Sprinkle it with the rock salt and grated nutmeg. Cover with soya cream, and put it in the oven at 180 degrees for about 25 min.  In the blender or food processor, grind the almonds and the coriander together.

Once the cauliflower has been in the oven for 25 minutes, take it out and make a layer of the almond preparation. Replace in the oven for another 10 minutes. If you are using parmesan cheese, sprinkle over the bake at the end. While you wait for your dish to be ready, cut the sweet potatoes into slices, and steam them for about 15 minutes. Once they are ready, mash them with a fork, add 1 pinch of salt, the tahini and season it with olive oil and roasted black sesame seeds.
